Tea parties are all the rage these days, bringing dainty petit fours and tiny tea sandwiches back in style. Cream cheese is always a good idea for crustless miniature bites, along with thinly sliced cucumbers or radishes. Top tea sandwiches with violas for a pretty presentation as delicate as a fine china teacup. Pinkies up!

What Are Violas?

Violas are edible flowers that come in various colors, including white, yellow, dark purple, and lavender. Their subtle flavor is secondary to their artful addition to tea sandwiches, salads, and cocktails.

Ingredients

  • 4 ounce cream cheese, softened

  • 1 teaspoon snipped fresh lemon thyme or chives

  • ¼ teaspoon cracked black pepper

  • ¼ cup violas, chopped

  • 4 slices brioche or challah bread, crusts trimmed, if desired, and cut into quarters

  • Toppers: thin radish slices, thin cucumber slices, microgreens, whole viola flowers

  • Flaked sea salt (optional)

Directions

  1. Make Viola Tea Sandwiches

    In a small bowl stir together the cream cheese, lemon thyme, and black pepper until smooth. Stir in chopped violas. Spread over brioche slices. Add toppers. Sprinkle with flaked sea salt, if desired.
